Where most lemon pepper chicken recipes call for a store bought lemon-pepper seasoning blend, this recipe is a from-scratch alternative that transforms just a little extra effort into a big payoff. 

While the powdered stuff does offer a solid concentration of lemony flavor, it can't help but be missing that brisk snap that only a fresh lemon can offer. The gentle spritz of citrus oils that mist the air as you zest each fruit, lingering on your hands and unassumingly lifting your mood. 

By spending a couple of minutes to process some fresh lemons and crack some black pepper, you'll be rewarded with a deeply flavored dinner that actually invigorates you as you cook it.

Like my Crockpot Chicken Legs recipe, these baked lemon pepper drumsticks are easy and require minimal ingredients. A low-effort (on your part!) dry brine period in the fridge makes sure these chicken legs get super crisp in the oven. They cook quickly and don't require much babysitting, which is always welcome on weeknights. 

Whether you're cooking for one after a long day of work, wrangling kids to the table, or like me, feeding a partner who is buried deep in his masters program workload, this is the kind of meal that will always meet you where you are.

  • I like to use bone-in, skin-on chicken legs for this recipe because they are so easy to work with and cook quickly, but you could definitely make lemon pepper chicken leg quarters or thighs if you want! Larger cuts of chicken will take longer to cook so if you make this swap, adjust accordingly and keep that meat thermometer handy.
  • I'm using fine sea salt here, but flakier salt varieties like kosher salt have more volume, so use 1 ½ teaspoons if that's what you're using. 
  • We'll be roasting these lemon pepper chicken legs in the oven at a high heat, therefore it's important to use a neutral oil with a high smoke point. Options canola, vegetable, peanut, and avocado oil are great options. My go-to is sunflower oil in my Evo sprayer!
  • Using freshly cracked black pepper here is paramount! The pre-ground stuff lacks the flavor and texture we're looking for here.

  • 2 pounds chicken legs (about 8 drumsticks)
  • 1 teaspoon salt
  • 2 whole lemons
  • 2 tablespoons neutral oil
  • 1 tablespoon cracked black pepper, or more to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Instructions

  1. Rub the chicken legs with the salt, then arrange them on a sheet pan with a wire rack. Place in the refrigerator, uncovered, for at least 4 hours, but up to 8 to 12 hours will produce even crispier chicken skin. I try to do this step in the morning when possible, that way the chicken can dry brine all day. raw chicken legs are arranged on a baking sheet with a wire rack next to a small bowl of salt
  2. Preheat your oven to 425℉ when you're ready to start cooking. Zest both lemons and set the zest aside. Then slice both lemons into thick half-moons, aiming to get about 6 pieces out of each fruit. If there are any obvious seeds, you can poke them out but if not, no big deal! Remove the salted chicken legs from the fridge. The surface of the chicken skin will be dry from the fridge, but if you spot any lingering surface moisture, pat it dry with paper towels.

  3. Rub the chicken legs with the oil, then sprinkle each leg with an even coating of lemon zest, cracked black pepper, garlic powder and onion powder.   4. Transfer to the oven and roast for about 30 mins, until the skin is a crispy golden brown and an instant read thermometer inserted into the thickest part of the meat reads 185℉. Give the lemon slices a flip halfway through the bake time.   5. Remove your lemon pepper chicken legs from the oven and let them rest for just a couple of minutes before serving with the roasted lemon wedges. Once you pull the chicken from the sheet pan, use a rubber spatula to scrape any juices and caramelized bits into a small bowl.
